CARIBBEAN PASTES
Rundown
- Coconut milk with Spring Onions, thyme and chilli. Usually used as a marinade for fish and poultry. Medium heat with cooling coconut back notes.
Jerk
- Very hot chilli due to the Scotch Bonnet chillies used to make this product. Spring onions, Thyme, Allspice provide the background flavours. Use as a meat rub, add to meat products such as burgers and sausages.
Gumbo
- Parsley and Thyme are the main flavour constituents of this mix. Chillies give it quite a kick. Use with seafood e.g. Prawns
